OLIVE OIL TYPES
EXTRA VIRGIN OLIVE OIL It is 100% olive juice. Its aroma must be clean, have no defect in smell or taste and, in addition, must be present fruity attribute (olive). Its acidity must be less than 0.8%. It is the best quality.
VIRGIN OLIVE OIL It is also 100% olive juice, although of somewhat inferior quality to the extra virgin: the Fruity attribute must be present, but a small organoleptic defect is admitted, not higher than 3.5 on a scale of 10 points. Its acidity can reach up to 2%.
REFINED OLIVE OIL It is lampante olive oil that has gone through the refining process. It is not marketed directly.
OLIVE OIL It is called like this to the mixture of refined olive oil of virgin olive or extra virgin. The proportion of virgin and refined depends on the criterion of the packer. Currently in Spain, it is marketed under the following names:
- Soft olive oil: it has a low proportion of extra virgin / virgin olive oil (approximately between 10% and 20%).
- Olive oil intense flavor: its percentage of extra virgin / extra virgin olive is superior to mild olive (approximately between 30% and 40%).
- OLIVE POMACE OIL It is a mixture of refined pomace oil and virgin or extra virgin olive oil.
